According to The Verifier, a site specializing in Israel, the foldable iPhone would be built like an iPhone capable of converting to an iPad. Folded, it would work like any iPhone. Unfolded, it could be used as an iPad. It would therefore skip iOS and run instead on iPadOS, the OS dedicated to iPad.
